Who doesn't love cookies?
These are delicious, easy and full of whole food ingredients. They are dairy-free & can also be made entirely gluten-free.
The smell in our kitchen when these were baking was epic, and the gooey texture they had when they were fresh out of the oven was to die for!
Ingredients:
1 Cup Rolled Oats (GF if necessary)
3/4 Oat Flour = 3/4 Cup Oats Blitzed in a Nutri-Bullet (GF if necessary)
1 1/2 Teaspoons Baking Powder
1/4 Teaspoon Pink Salt
1 Large Egg White
1 Teaspoon Vanilla Extract
1/4 Cup Almond Butter (or you can use peanut!)
1/2 Cup Pure Maple Syrup
1/2 Cup Dark Chocolate - I used Lindt 75% and broke it into chunks
Method:
Pre-heat oven to bake, 180 degrees celcius & line a tray with baking paper.
In a small bowl, combine the dry ingredients.
In a separate, larger bowl, whisk the egg white together with the vanilla & almond butter until smooth.
Add the maple syrup & whisk until smooth and a bit bubbly.
Add the dry ingredients and whisk until well combined.
Fold in the chocolate
Place tablespoon-sized balls of the dough onto baking sheet and place in oven for approx. 14 minutes.
Leave for AT LEAST a couple of minutes to cool - it will be hard!
